Totally wild asparagus

If you look carefully in the hedgerows around Domaine Jones you can see that the wild asparagus has sprouted.  It is quite difficult to see at first amongst the prickly asparagus plant. The tall spindly shoots are no thicker than a size 6 knitting needle but can grow to up to a metre high in search of sunlight.  And picking asparagus is like looking for a needle in a haystack! The locals, however, have it down to a fine art and seem to help themselves on a first come first served basis.  Once picked it is usually lightly blanched then added to a delicious asparagus omelette - bon appetit!!
